RECIPE: Happy 4th of July!

Hope you are having a wonderful holiday weekend and a very Happy 4th of July! We like to offer recipes that incorporate goji berries or goji juice. We saw this fun fruit tart recipe on and have modified it to incorporate goji berries for your Independence Day festivities! This way, you can have a fun treat that still has some delicious nutritional benefits and is rich in antioxidants. Happy 4th of July!



Fill premade miniature tart shells or phyllo cups with sweet mascarpone cream (recipe below), then arrange on a tray and top with blueberries and goji berries to create stars and stripes.

Mascarpone Cream:

Beat an 8-ounce container of mascarpone cheese and 3 tablespoons confectioners’ sugar with a mixer until smooth. Gently fold in 1/2 cup freshly whipped cream.
